Most dogs in the United States have worked through chicken, beef, lamb, turkey and pork by the time they are three. Emu never came near the bowl.

What it tastes like to a dog
Emu carries a strong aroma and a distinct flavour. For a dog that has been eating the same chicken formula since it was a puppy, that novelty is worth something on its own.
Trainers care about this. A treat only functions as a reward if the dog wants it more than it wants whatever else is going on, and a protein the dog has never met tends to clear that bar without needing to be large.

For most American dogs, yes. Emu is rarely used in commercial pet food, so the odds that a given dog has eaten it before are low. Check your own dog's history to be sure.
