Almost all the meat on an ostrich sits in the leg, so the leg is what we buy. South Africa produces most of the world's ostrich and we source there.
Slow is the whole trick
Our bones come down slowly over weeks, in rooms where the humidity and the temperature drop by degrees. That is why the process takes as long as it does.
Then a finishing pass to sterilize, and a smoke over natural wood chips. The smoke is a preservation step, not a flavor one. The golden color and the smell when you open the bag come along with it.
Nothing added. No smoke flavoring, no basting, no glaze, no bleach, no preservatives beyond the smoke itself.

Shelf life varies by product and the date is printed on your bag. Once it is open, roll the zip closed and keep it dry.
Twelve weeks for treats and toppers. Six months for bones, since a puppy’s teeth are still coming in and a hard chew is a lot to ask of them. If you are not sure, ask your vet.
A protein your dog has not eaten before. Novelty belongs to the individual animal rather than the species, so a dog raised on kangaroo will not find kangaroo novel.
Bones splinter when they are dried fast and go brittle. Ours come down slowly over weeks under controlled humidity, which is the whole reason the process takes as long as it does. No chew is indestructible though, so stay in the room and take it away when it gets small enough to swallow.
Match the bone to the chewer rather than the dog. A small dog who destroys everything wants the Large knuckle. A big gentle dog is fine on a Medium. If you are between, size up.
It depends entirely on the dog. A moderate chewer will get days out of a cane bone. A dog who means it will get through a marrow bone in an afternoon.
